Abuelita’s Guacamole

July 7, 2016

The king of all dips done right.

  • Prep: 15 mins
  • Yields: 6-8 servings

2 ripe avocados, diced

1 lime, squeezed

1 Roma tomato, minced

1 jalapeno or Serrano pepper, minced

1/4 red onion, minced

1/4 cup cilantro, minced

1 garlic clove, minced

Salt and pepper to taste

1Mince all items. You don’t have to put them in separate bowls if you don’t want to. It makes for more cleanup later, but there’s lots to be said about organization.

2Combine all ingredients in a bowl larger than you think you’re going to need. Mash with a potato masher or biscuit dicer. You can even use a large fork.

3Once it’s all combined, season to taste. Use less salt and pepper than you usually use. Once you allow it to marinade, the flavors will intensify.

4Cover with plastic and allow to sit at room temp for an hour. In the fridge, it will take at least twice as long, cold cools down flavors.

5Once it’s allowed to sit, taste it to check for seasoning and serve. The best dip for any and all chips.
