Easy Monte Cristo

A lighter take on the diner classic that expertly blends sweet and savory.

- Yields: 1 monolith of a sandwich
1In a small bowl, whisk together eggs and milk. Soak bread slices in the custard then move to clean plate.
2Melt butter in a medium non-stick pan. Add a slice of soaked bread and cook on medium heat both sides, flipping once. Repeat with all slices. Move to a clean plate.
3Place a cooked slice in the pan and spread a little mayo on top. Top the slice with half of the cheese and sliced deli ham. Top ham with another slice of cooked bread. Spread that slice with Purveyors Kitchen Apricot Moscato Fruit Spread. Top with remaining cheese and deli ham. Top with remaining slice of bread.
4Fry sandwich on medium heat for about 4 minutes each side. Remove to plate.
5Slice halfway to reveal ooey goey layers and enjoy.
The cheese and deli meat you stuff this sandwich with are totally up to you.
