Family Style Marinara Gnocchi

Italian potato dumplings need little else than a yummy tomato sauce, like Kranston & Foley Organic Family Style Marinara Sauce.

4 medium Yukon Gold potatoes

1 egg yolk

1/2 tsp salt

1/2 cup-3/4 cups all-purpose flour as needed

1 jar Kranston & Foley Organic Family Style Marinara Sauce

Shredded parmesan cheese


1Stab your potatoes profusely with a fork. Bake them in a 350 degree oven or until cooked through. Slice halfway and allow to cool.

2Pass potato halves through ricer into a large, clean bowl. Add your salt and egg yolk and mash till smooth.

3Add flour. This part is tricky. Start with 1/2 cup of flour and mix it into your potatoes. Add more flour, a little bit of a time until a a malleable dough forms. Form dough into a ball and divide into four equal pieces.

4Roll dough into logs and portion off 1/2 inch dumplings. Keep them small. To form, dip a fork into a little white flour and roll the dumplings down the length of it so ridges form. Boil a pot of water.

5Once a rolling boil is achieved, drop dumplings in batches and remove once they float to the top. Remove dumplings to clean bowl, and toss with a little oil so they don’t stick.

6To serve: ladle Kranston & Foley Organic Family Style Marinara Sauce over the gnocchi and serve. Or, ladle sauce over gnocchi, top with cheese and broil until cheese is melted.
