Grilled Zucchini Salad

A simple summer salad that will dazzle friends and confuse enemies.

  • Yields: 6-8 servings


4 zucchini, green or yellow or a mix and match

2 tablespoons olive oil

2 tablespoons Purveyors Kitchen California Cabernet Vinaigrette

3 tablespoons chopped herbs, optional


1Using a vegetable peeler, shave zucchini into "noodles." Stop shaving once you hit the seeds. Set shaved zucchini in a bowl.

2Toss zucchini with olive oil. Preheat grill pan to medium high.

3Grill zucchini noodles on each side until lightly charred, a minute or two per side.

4Remove cooked zucchini to clean bowl. Toss lightly with vinaigrette and chopped herbs.

5Serve over butter lettuce. Eat like a spring roll or taco.

Too much bounty in your garden? Slice eggplant, mushrooms and tomatoes, grill and add to the salad.
