A modern spin on the classic American salad.
- Prep: 15 mins
1Place apples and vinegar in a medium sized bowl. Toss to coat.
2Whisk together mayonnaise and greek yogurt in a large bowl.
3Add apples, red onion, golden raisins and mint.
4Mix well to combine. Don’t worry if a few of your pretty apple slices break under the pressure of a mixing spoon.
5Serve salad over chopped lettuce. Garnish with chopped bacon and cashews.
Use your favorite out-of-hand eating apples, but try to use at least two different colors. Everybody loves a bright, rainbow of a salad.
