A delicious and refreshing summer cocktail made with leftover fruit.
- Prep: 10 mins
- Yields: 8-10 servings
1Blitz diced watermelon in your favorite blender carafe.
2Strain. You can use a mesh strainer, or Chemex or both, like me. Unless you like your juice chunky. I don’t. And don’t kid yourself: nobody does. Strain that shizz.
3Fill your favorite glass with ice. Pour over watermelon juice, about 3/4 of the way up.
4Add simple syrup and lime juice to taste. I do about a tablespoon of each. Add a dash of soy sauce. I promise you’ll love it.
5Finish with a hit of club soda. Garnish with mint.
Squeemish about the soy sauce? Use a pinch of salt or leave it out altogether: it will still be great.
